- 1 English cucumber, ⅛-inch slices
- 1 Tbsp. soy sauce
- 2 Tbsp. rice vinegar
- 1 Tbsp. sugar
- ½ tsp. chili powder
- ¼ tsp. sesame seeds
- 2 scallions, chopped
Slice the cucumber into ⅛-inch slices or cut in half lengthwise first for half-slices.
Combine soy sauce, rice vinegar, and sugar in a bowl.
Add the sauce to the cucumbers.
Add chili powder and sesame seeds and stir.
Add scallions and stir.
