- ½ cup olive oil
- 1 Tbsp. red wine vinegar
- 1 cup fresh mint leaves, chopped
- ¼ cup fresh parsley leaves, chopped
- ½ Tbsp. dijon mustard
- 1 tsp. lemon juice
- 1 Tbsp. shallots, minced
- 1 garlic clove, crushed
- ¼ tsp. salt
- ⅛ tsp. black pepper
Combine all ingredients into a high-sided container.
Puree the ingredients with an immersion blender.
Pour the sauce into a bowl and serve at room temperature.
